Welcome to Understanding Nutritional Quality For Better Food Choices: Proteins and their role in determining nutritional quality, developed as a E3UDRES2 Future Appetizer.
This course explores how proteins shape the nutritional quality of foods, with particular attention to protein composition, digestibility, and the factors that influence how effectively proteins meet human nutritional needs. Blending scientific concepts with applied examples, participants will learn how protein quality is evaluated, how digestion and bio-availability translate into nutritional outcomes, and how food processing, formulation, and food matrices can influence both protein functionality and nutritional value.
Through case studies, scientific literature, and analytical approaches used in modern food and protein science, this course connects molecular-level protein structure to pressing questions of food quality, human nutrition, and the growing role of sustainable protein sources.
